We suggest to use whole cold milk (at circa 5° C / 41° F), with a protein content of at least 3% and a fat content of at least 3.5%. Proteins will incorporate air in the cream, while fats will make it dense and steady. Also semi-skimmed cow milk, some lactose-free milk and soy drink are proven to deliver a good result.
Yes. It is possible to brew coffee even when the steam LED is steady. However, it is important to note that the boiler temperature will be higher, and the coffee may be over-extracted, with an uneven flow and possible splashes or steam bursts. To avoid this, we recommend disabling steam mode and waiting until the machine returns to the coffee brewing temperature (visible on the display) before proceeding.
Pre-infusion is a phase that takes place before the coffee extraction and during this phase, the ground coffee is moistened with low-pressure water, allowing a wider range of aromas to be released.
With Classic UP, pre-infusion can be activated and set to three different levels – MIN, MED, MAX – or it can be disabled. A lighter roast coffee generally requires a longer pre-infusion time to better balance its flavor, while a darker roast requires a shorter pre-infusion time.
The PRESET function permits to save the desired coffee brewing time. The machine automatically stops the brewing process once the set time has been reached; the brewing is therefore time-based rather than volume-based.
- Press the ON/OFF switch to turn on the machine and attach the empty and clean portafilter to the group (with the selected filter inside).
- For a better result, choose a high-quality coffee. We suggest using fresh coffee beans, to be ground just before use, or pre-ground coffee specifically labeled “for espresso machines”.
- If using coffee beans, grind them by choosing the correct consistency: if the grind is too coarse, water will pass through too quickly; if it is too fine, the water flow will be hard.
- You can adjust temperature and pre-infusion to suit the characteristics of your desired coffee.
- When the coffee toggle light is steady, the machine has reached the correct brewing temperature and is ready to use.
- Fill the filter with ground coffee and tamp for a few seconds using the provided tamper, applying a consistent and even pressure.
- Remove any excess coffee from the rim of the portafilter, then attach it to the group and press the coffee toggle to start brewing.
- Once the desired amount in the cup has been reached, press the coffee toggle again to stop the brewing. Your espresso is now ready!
