Superdrinks: Mango Sunshine ft Taiao and Damien Burgess

Let’s make way for the third chapter of the Superdrinks series, born from our collaboration with Taiao, where coffee meets functional ingredients and superfoods to bring to life creations that go beyond the ordinary.
Ube: the purple superfood you don’t expect
Although it is probably the least known among the superfoods in our series, ube offers quite a few benefits: it is rich in vitamin C, potassium, and fiber. It is a type of purple yam native to the Philippines with an intense purplish hue. In traditional Filipino cuisine, it is used in both sweet and savory dishes.
In powder form, like the one used in this recipe from Taiao’s formula, ube becomes the base for a foam that visually dominates the drink.
The coffee that makes the difference
The over-ice coffee is the glue of the entire composition, especially in balancing the sweet, creamy flavors and the tropical notes of ube, mango, and coconut, creating a highly balanced flavor profile.


The recipe
In collaboration with Taiao
For a tall glass
Step 1: Peel and dice a fresh mango, then blend it until you get a velvety puree and pour it into the bottom of the glass.
Step 2: Fill the glass with crushed ice over the puree.
Step 3: Gently add the coconut milk, pouring it along the inside walls of the glass to preserve the layering.
Step 4: Brew the over-ice coffee directly into the glass, letting the coffee cascade through the layers to create a distinct visual effect.
Step 5: Combine the Taiao ube powder with soy milk in a siphon and whip until you achieve a soft foam, then gently lay it onto the surface of the drink.
Step 6: Top with a slice of dried mango. Serve immediately.
