Superdrinks: Mango Sunshine ft Taiao and Damien Burgess
Have you ever tasted something and immediately felt transported somewhere else? Could it be through a memory, a moment or a feeling, some flavors have the power to tell the story of a place. Our new Superdrink “Mango Sunshine” does exactly that: it takes you to a tropical summer filled with sweet aromas, daydreams, crashing waves and palm trees gently swaying in the breeze.
Let’s make way for the third chapter of the Superdrinks series, born from our collaboration with Taiao, where coffee meets functional ingredients and superfoods to create drinks that go beyond the ordinary.
Ube: the purple superfood you don’t expect
Although it is probably the least familiar superfood in our series, ube offers remarkable nutritional benefits: it is rich in vitamin C, potassium and fiber and it is a vibrant purple yam native to the Philippines. In traditional Filipino cuisine, it is used in both sweet and savory dishes.
Taiao turned it into a powder and, for this recipe, ube becomes the base of a light, velvety foam that gives the drink a striking visual identity.
The coffee that makes the difference
The over-ice coffee is what brings the whole drink together. It balances the sweetness and creaminess of the other ingredients with the delicate notes of ube and the tropical ones of mango and coconut, creating a fresh, harmonious and rounded flavor profile.

The recipe
In collaboration with Taiao
1: Peel and dice a fresh mango, then blend it into a smooth, velvety purèe and pour it into a tall glass.
2: Fill the glass with crushed ice, over the purèe.
3: Gently add the in the coconut milk.
4: Brew the over-ice coffee directly into the glass, allowing it to cascade through the layers.
5: Combine the Taiao ube powder with soy milk in a siphon and whip until light and fluffy, then gently spray the foam on top of the drink.
6: Garnish with a slice of dried mango and serve immediately.
